so our dining room ceiling has always had a bit of a peeling problem. maybe because it's an old house, or the plaster, but we can't seem to get around it. so my solution? tin ceiling tiles! i love the look of them, and will probably paint them an off white. i'm also considering wall paper that looks like tin tiles (much cheaper).
